Blackened chicken with mango salsa and minted yoghurt

For the chicken

* 4 x 200g totally free selection chicken breast

* two tbsp paprika

* four tsp cumin

* 2 tsp turmeric

* 2 tsp chilli powder (in case you like spicy meals include added chilli)

* 1/4 cup skim milk

For the mango Diabetes salsa

* two mangoes, diced

* 1/2 red onion, finely diced

* 400g corn kernels

* one red capsicum, finely diced

* 1/2 bunch coriander, finely chopped

* pulp of 2 passionfruit

* juice of 1 lime

For your yoghurt

* 400g excess fat no cost natural yoghurt

* 1/4 cup finely chopped mint

* 1 pinch of mixed herbs

Method

Preheat a barbecue grill or chargrill pan on medium and grease with a mild covering of spray oil.

Combine spices and distribute over a big dinner plate.

Pour milk into a mid-sized bowl and dip the chicken in to the milk then place on the spice plate. Coat each sides in the chicken, shake gently to get rid of an extra.
